kraft mac and cheese compareThere’s been a lot of talk about Kraft putting artificial dyes Yellow #5 and Yellow #6 in their Kraft Mac and Cheese. A few bloggers started an online petition to get Kraft to remove the dye from its Mac and Cheese saying that it can cause cancer and make your kids hyper.

As we noted last time, Kraft says the dye is federally approved and perfectly safe.

While the bloggers compared Kraft Mac & Cheese to it’s dye-free British counterpart (Kraft Cheesy Pasta) I pointed out that dye-free macaroni is available right now.

This afternoon I cooked up three boxes of macaroni: Kraft original, Kraft Organic and Annie’s Macaroni and Cheese. I wanted to see for myself if there’s really a big difference in color–and taste. Kraft Organic and Annie’s don’t use Yellow #5 and #6.

The first thing I noticed was the color of the raw noodles–the original Mac & Cheese was pale while both organics (which used a whole grain pasta) were more buttery colored. The color difference in the cheese packets were obvious. Original Kraft has a bright orange hue, Organic Kraft is very bland and Annie’s was pale gold.

In order to give the pastas the best chances of a similar taste I used real butter and 2% milk to mix up all three.

The results were what you would expect–after all Kraft knows their stuff. My 5 year old said the pale yellow Organic Kraft looked yucky, but he said the Annie’s orange noodles looked just as good as the Original Kraft. But after tasting them, he said they were all good.

My 14 year old, who has considerably more experience with Mac & Cheese, said he liked the Original Kraft best for color and flavor.  I believe his remark was “government approved chemicals taste good!” Smart arse.

After I tasted all three, I have to say the Kraft Original was still the best for flavor. Color doesn’t matter to a grown up. Both the Annie’s and the Organic Kraft were bland and buttery in taste. Which is not the same as cheap–have you ever had a box of no-name mac & cheese? Ewww. These weren’t bad, just not as good. If you put it on a plate next to your fish sticks one night, you’d be happy. But the Kraft Original was the only one with a tangy kick to it.

A Note on cheese color:

I have no idea why Kraft makes their Mac & Cheese bright orange. BUT I did do a little research and I can tell you the natural color of cheese depends on the kind of grass  cows eat. According to this article on Slate if a cow grazes on rich summer grass they give milk that turns cheese into a deeper yellow color. A poor diet results in less fat in the milk, less fat makes pale cheese. English farmers had this figured out waaaaaay back in the 16th century and added carrot juice or marigold petals to perk up the color of cheese.

The Cheese Underground reports that cheese makers in Wisconsin started coloring cheddar with Annatto seeds in the 18th century. It seems that once farmers started feeding corn to their cows instead of grass, the milk produced a pale cheese. As a bonus, the orange cheese was easy for customers to spot compared to pale yellow New York cheese.

It would seem cheese color has always been about marketing!

Annie's Vegan Mac and Cheese New Product Review

As of early September, Annie's Homegrown released a new line of one of America's most beloved comfort foods: macaroni and cheese. This isn't just any mac and cheese, however: this is Annie's vegan mac and cheese. 

As a vegan and former mac and cheese lover, I was curious and excited to see if Annie's vegan version of one of their most popular products would measure up. There are a handful of other vegan mac and cheeses available from competing brands, such as Daiya, but what makes Annie's so compelling is the brand's dedication to being organic, non GMO and even gluten free. 

I picked up the "Annie's Homegrown organic and vegan elbow pasta with creamy sauce" from my local Whole Foods for $2.89 a box. 

The Ingredients 

Perhaps the most impressive aspect of Annie's vegan mac and cheese is the list of ingredients. The box boasts that what it contains is "made with goodness," and I would not disagree: there are no artificial flavors, synthetic colors or preservatives and everything is non GMO and organic. 

The pasta provided in the box is gluten-free and made with rice flour, a fact so well disguised that it was not until after I ate a bowl of the dish and started reading the box more carefully for this article that I realized it was not "real" pasta. 

The sauce is made primarily with organic pumpkin and sweet potato powder, but also features spices such as paprika and onion and garlic powder.

The only downside of the nutrition label is the sodium level, coming in at a whopping 240mg per serving (a serving is only one cup, so you'll probably eat more). There are 4g of protein per serving and virtually no sugar,  still making it a good alternative to some more processed vegan mac and cheese alternatives. 

The Cooking Process 

Cooking the Annie's vegan mac and cheese is quick and easy. All you need is a saucepan, measuring cup, colander, whisk some almond milk and buttery spread (optional). 

The entire process only takes about 12 minutes, making it a perfect option for anyone in a hurry. 

To make Annie's vegan mac and cheese, you must first cook the pasta. When the pasta is done, drain it in a colander and make the sauce using the same warm saucepan that the pasta was cooked in. Stir a half cup of almond milk with a couple of teaspoons of buttery spread (I used original Earth Balance) and sprinkle the seasoning provided in the Annie's mac and cheese box over top. Whisk everything together until the sauce starts to thicken. Add the cooked noodles to the sauce, give them a good stir, and eat up. 

How Annie's Vegan Mac and Cheese Tasted

I served my Annie's vegan mac and cheese with some nutritional yeast and extra paprika to add a little zest, but I also tasted it on its own. This stuff is really good by itself: Annie's did a great job being assertive with flavors to ensure that the product was not bland. That being said, adding nutritional yeast and paprika made it even more "cheesy" and flavorful. 

Although it has been a long time since I myself have eaten "real" mac and cheese, I found that Annie's vegan mac and cheese was almost scarily similar to the comfort dish I grew up eating. The sauce comes out thick, creamy and bright yellow without any artificial coloring, tricking the taste-buds and mind alike.

In Conclusion  

All things considered, I was impressed by Annie's vegan mac and cheese. I went into the buying process with skepticism and doubt that it would even closely resemble the meal I grew up enjoying as a child. After giving it a try, however, I found that those doubts were completely unwarranted.

I would recommend Annie's vegan mac and cheese to anyone (vegan or not) that wants to enjoy an easy to prepare, affordable and comforting  meal that they can feel good about eating. With a gluten free, non GMO and completely plan-based ingredients, Annie's mac and cheese not only does good for your taste-buds, but does good for your health and environment as well.

Annie’s removing a chemical in mac and cheese linked to fertility issues

Annie’s Homegrown, largely known for its "organic" macaroni and cheese line, is taking steps to remove a potentially harmful class of chemicals, called ortho-phthalates, from its products and packaging materials. 

These chemicals make plastic flexible, and phthalates have already been banned in many kids' toys over health concerns. Some scientists say the chemicals harm fertility, health of babies, disrupt hormones key for development and damage genetic material in sperm. One 2016 study in particular tied exposure to the chemicals to "diminished sperm count and deteriorated sperm quality, which may lead to infertility."

"We are troubled by the recent report of phthalates found in dairy ingredients of macaroni and cheese and take this issue seriously," reads a recent update to Annie’s website. The company noted that these chemicals can be found in manufacturing equipment and has a firm foothold in supply chains beyond just the food industry. The Centers for Disease Control and Prevention (CDC) says phthalates can be found in personal hygiene products, makeup, plastic packaging and more.

POOR SPERM QUALITY LINKED TO PHONE AND LAPTOP USE AT NIGHT, STUDY SAYS

The FDA hasn’t established a level for the amount of phthalates permitted in foods, though Annie’s notes "any trace of phthalates [in mac and cheese products] are below the EFSA [European Food Safety Authority] standard."

Fox News has request comment from the FDA.

The update on Annie's website also reads, "We continue to work with our trusted suppliers to eliminate ortho-phthalates that may be present in the packaging materials and food processing equipment that produces the cheese and cheese powder in our macaroni and cheese."

General Mills, which bought Annie's in 2014, shared a statement with Fox News on Friday, writing in part, "We are committed to learning more to better understand this emerging issue and determine how Annie’s can be a part of the solution."

Annie's Mac & Cheese Working To "Eliminate Ortho-Phthalates" From It's Products

Annie's Homegrown Macaroni & Cheese is taking steps to eliminate ortho-phthalates from their products and packaging. The Annie's Homegrown brand is a popular organic line known for taking comfort food and making it a healthier option which makes this a surprising discovery. Ortho-phthalates are harmful chemicals that is used to make plastics flexible. They have been found in the dairy products that Annie's uses and that's not good.

Ortho-phthalates have been linked to fertility issues in men having a negative effect on their sperm quality. These chemicals can potentially harm the sperm, the health of a developing baby, damage the genetic material in sperm, and be overall harmful to the reproductive process. A 2016  study whose abstract is found on PubMed linked ortho-phthalates to these harmful effects on sperm. This study did find the relation between phthalates and a decline in sperm quality

Phthalates are already banned in some children's toys because of their known potential harm. Annie's Homegrown has acknowledged the presence of phthalates in their food on their FAQs page and they're committed to phasing them out as quickly as possible.

Apparently, phthalates can be found on metal manufacturing equipment used in factories. It's thought that the phthalates were contaminated on equipment in the factory where Annie's Homegrown produces their food. Annie's Homegrown did note that the Food and Drug Administration (FDA) in the US doesn't have a set level of acceptable phthalates allowed in food. That means phthalates levels in food in the US aren't monitored at all.

However, in Europe, those levels are monitored by the European Food Safety Authority (EFSA). Their level is set at 0.05 mg/kg of body weight. Annie's Macaroni and Cheese has been tested and the level of phthalates falls below the EFSA standard. According to WDRB, in Kentucky, Annie's Homegrown will be "taking steps" to remove these chemicals.

Seeing this organic brand having this issue can be a bit concerning for parents. This is often bought as a healthier alternative to other mac and cheese options like Kraft and Velveeta. Turning to an affordable organic brand seeking a higher quality product to discover it has potentially harmful chemicals is concerning. Yet they aren't alone in having these chemicals.

In 2017, The Center for Food Safety published a study done by the Coalition for Safe Food Processing who tested the manufacturing facilities for 10 different brands of macaroni and cheese powder. All of them contained small levels of phthalates.

Reviving Mac & Cheese

Follow the instructions below to get a creamy, revived dish, and add some flair at the end to make it extra special.

Microwave

1. Place the macaroni & cheese into a microwave safe bowl. Make sure to only take out what you're going to use.

2. Add 1 tablespoon of milk per cup of mac and cheese. *If you'd like to add more creaminess and flavor, substitute half-and-half or cream.

3. Cover with an inverted plate, making sure to use oven mitts when removing from the microwave to avoid burning yourself.

4. Place the dish in the microwave and heat it up slowly: start with one minute, stir the mac and cheese, then continue to heat at 30 second intervals until you reach a desired temperature.

Tip: For extra flavor, mix in some grated cheese, broccoli, or other tasty tidbits before placing in the microwave.

By the 1950s, these preserved foods — and their cousin, fast foods touted for their assembly-line uniformity — were seen as the cutting edge, the reliable and “safe” choice for one’s family.

By the 1980s and 1990s, the public health ramifications of fast food were known, the word “chemical” became the enemy, and people were looking for natural and organic alternatives. But it was hard to go back to the made-from-scratch dinners of yore, so now, convenience foods — like a box of pasta with an artificial flavor-free cheese sauce — had to be natural as well as quick. Annie’s shells and white cheddar mac and cheese would be the first of its products to be certified organic, in 1999. In the following years, it would push its wholesome image further as customers’ desires dictated: It promised to prioritize partnerships with organic dairies, make its packaging and cans BPA-free, and use mostly organic but always non-GMO ingredients.

Those early tenets of Annie’s are now commonplace throughout a food industry looking to cash in: By 2016, the natural food and drinks market was valued at almost $80 billion worldwide. That same year, Kraft revealed that it had secretly been fucking with us for a while: For a few months, it changed the recipe for its iconic Blue Box mac and cheese, replacing artificial colors with turmeric and annatto (the latter had long been used by Annie’s as a coloring agent), and ditching the artificial preservatives and flavors. Kraft said it had heard from customers that they wanted more “natural” ingredients, and decided to do a nationwide blind taste test. Aside from anyone who perhaps was allergic to turmeric, it seemed to go well. That recipe is now the permanent one used by Kraft.

As much as it shouldn’t be, food is moralized. What’s “good” or “bad” changes all the time, but there is always a divide that makes people feel bad about themselves for eating things they enjoy. Kraft is delicious. Kraft is what we want. But we are made to feel we shouldn’t want it because it’s unnatural and artificial.

Annie’s has the veneer of health to it, if not health itself. But most importantly, it acknowledges that making all these choices is hard, that it takes work to lead a “natural” life, and meets consumers on their level. (It also made natural and organic food more available to a mass market at a similar price to the “regular” options; you can get both Annie’s and Kraft for 99 cents a box at Target.) Its products seem to convey the idea that you don’t have to buy locally grown arugula and grass-fed eggs and spend 30 minutes assembling a salad. By choosing Smartfood over Doritos, or by choosing Annie’s over Kraft, you’re choosing something better (not great, but better) for your body, your family, and your planet. Sure, it might not be the “best,” but let yourself off the hook. At least you’re trying.

In a sane society, food should be nutritious, sustainable, and easy to make. It may not be structurally so different from Kraft, but by proving there was a market for “organic junk,” Annie’s pushed the market in that direction.
