Almonds are packed with protein and healthy fats. But is almond milk — a popular cow’s milk substitute — healthy? This one’s no cold case. Almond milk is a worthy addition to your fridge, according to 4/5 nutrition experts.

But what is it, anyway? Almond milk is essentially made by pulverizing almonds in a blender with water, then strained. That might not sound like much, but the milk substitute sure is popular. Sales of almond milk now exceed $700 million per year and account for 4.1 percent of all milk sales; six years ago, that number didn’t even reach 1 percent, according to Fortune.

The darling of the plant milk substitutes, almond milk is an obvious choice for vegans and people with lactose allergies. It comes with an added perk, too, says Kristin Kirkpatrick, registered dietitian and manager of wellness nutrition services at Cleveland Clinic’s Wellness Institute. Almond milk is 50% lower in calories than cow’s milk, making it a good for people trying to lose weight. And because it’s not an animal product, it has no cholesterol.

But even though it can stand in for cow’s milk in smoothies, oatmeal and cereal, it’s not milk’s nutritional clone.

15 Ways to Use Almond Milk

In every F&W issue of 2013, this column will introduce a new pantry item to expand your repertoire.

The health benefits of almonds are myriad and well documented. They’re high in protein, vitamin E, fiber, and minerals such as magnesium, selenium, manganese, zinc, potassium, iron, phosphorus and calcium (commercial almond milks are often fortified with extra calcium). There’s evidence that almond milk helps to lower LDL cholesterol and protect against heart disease. It is relatively low in calories and has zero saturated fats, making it a good choice for maintaining a healthy weight.

I like it because it tastes great and adds richness to lots of dishes. In F&W’s January “Handbook” section, I created a bunch of recipes that use almond milk—some sweet and some savory. Though the substitutions may not be universal, they are pretty wide and varied. On the sweet side, I created a dairy-free Banana-Almond Milk “Soft Serve” ice cream, using almond milk, frozen bananas (already pretty creamy), honey and crystallized ginger, all pureed in a food processor. Then, I topped it with a yummy, Warm Chocolate-Almond Sauce, made very much like a classic ganache, which is just chocolate and cream. But I subbed out the cream with almond milk and a drop of almond extract. Almond milk was also great in place of cow milk in my Almond-Milk Rice Pudding, in which I cooked sushi-rice risotto-style using almond milk and a bit of sugar. Since almonds and cherries are a classic pairing, I topped the pudding with sweet-tart cherry preserves. Divine!

On the savory side, I made a luscious Spicy Cauliflower Puree that’s as good as any mashed potato I’ve ever had, but practically calorie-free (well, not really). I simmered cauliflower in almond milk until soft, then drained and pureed it for a thick, silky mash. This also makes a lovely soup if it’s blended with all of the almond milk. In yet another recipe, Almond-Milk Creamed Spinach, I made a béchamel with almond milk, into which I folded wilted spinach and grated Parmesan (I never said dairy-free, though I suppose you could use soy cheese?), then topped it with panko and marcona almonds and baked it until it was bubbling and golden. Now that’s divine!

What is oat milk?

As oat milk began development within the 1990s, it's a relatively young product compared to other plant milk. From 2017 to 2019, sales increased by ten times, and they continue to multiply.

Both oat milk and almond milk become fortified in the production process. This means that both kinds of milk contain decent calcium, vitamin A, and vitamin D amounts. 

Unlike almond, though, oat milk offers a few different vitamins, namely riboflavin and vitamin B12. Plant-based dieters are more susceptible to vitamin B12 deficiencies, and oat milk provides an excellent dietary source of this cell-strengthening vitamin.

    In every F&W issue of 2013, this column will introduce a new pantry item to expand your repertoire.

    The health benefits of almonds are myriad and well documented. They’re high in protein, vitamin E, fiber, and minerals such as magnesium, selenium, manganese, zinc, potassium, iron, phosphorus and calcium (commercial almond milks are often fortified with extra calcium). There’s evidence that almond milk helps to lower LDL cholesterol and protect against heart disease. It is relatively low in calories and has zero saturated fats, making it a good choice for maintaining a healthy weight.

    I like it because it tastes great and adds richness to lots of dishes. In F&W’s January “Handbook” section, I created a bunch of recipes that use almond milk—some sweet and some savory. Though the substitutions may not be universal, they are pretty wide and varied. On the sweet side, I created a dairy-free Banana-Almond Milk “Soft Serve” ice cream, using almond milk, frozen bananas (already pretty creamy), honey and crystallized ginger, all pureed in a food processor. Then, I topped it with a yummy, Warm Chocolate-Almond Sauce, made very much like a classic ganache, which is just chocolate and cream. But I subbed out the cream with almond milk and a drop of almond extract. Almond milk was also great in place of cow milk in my Almond-Milk Rice Pudding, in which I cooked sushi-rice risotto-style using almond milk and a bit of sugar. Since almonds and cherries are a classic pairing, I topped the pudding with sweet-tart cherry preserves. Divine!

    On the savory side, I made a luscious Spicy Cauliflower Puree that’s as good as any mashed potato I’ve ever had, but practically calorie-free (well, not really). I simmered cauliflower in almond milk until soft, then drained and pureed it for a thick, silky mash. This also makes a lovely soup if it’s blended with all of the almond milk. In yet another recipe, Almond-Milk Creamed Spinach, I made a béchamel with almond milk, into which I folded wilted spinach and grated Parmesan (I never said dairy-free, though I suppose you could use soy cheese?), then topped it with panko and marcona almonds and baked it until it was bubbling and golden. Now that’s divine!

    • No cheesecloth? You can also use a very fine mesh strainer for this. Just be sure to push down all the liquid with a spoon.

    Almonds are packed with protein and healthy fats. But is almond milk — a popular cow’s milk substitute — healthy? This one’s no cold case. Almond milk is a worthy addition to your fridge, according to 4/5 nutrition experts.

    But what is it, anyway? Almond milk is essentially made by pulverizing almonds in a blender with water, then strained. That might not sound like much, but the milk substitute sure is popular. Sales of almond milk now exceed $700 million per year and account for 4.1 percent of all milk sales; six years ago, that number didn’t even reach 1 percent, according to Fortune.

    The darling of the plant milk substitutes, almond milk is an obvious choice for vegans and people with lactose allergies. It comes with an added perk, too, says Kristin Kirkpatrick, registered dietitian and manager of wellness nutrition services at Cleveland Clinic’s Wellness Institute. Almond milk is 50% lower in calories than cow’s milk, making it a good for people trying to lose weight. And because it’s not an animal product, it has no cholesterol.

    But even though it can stand in for cow’s milk in smoothies, oatmeal and cereal, it’s not milk’s nutritional clone.

    “Unlike dairy milk and soy milk, almond milk is naturally low in protein,” says Alicia Romano, registered dietitian at Frances Stern Nutrition Center at Tufts Medical Center. That may seem strange, since almonds are little ovals of protein: an ounce of the nuts has 6 grams.     Almond milk has considerably fewer calories (17 per 100 grams) than coconut milk. Coconut milk is much richer in calories — 154-230 per 100 grams, depending on how thick the milk is. Thicker milk is higher in calories and fat.

    Almond milk has no saturated fat, 0.625 grams of monounsaturated fat and 0.208 grams of polyunsaturated fat, making the total fat conent 1.04 grams.

    Coconut milk contains 18.91 grams of saturated fat, 0.901 grams of monounsaturated fat and 0.233 grams of polyunsaturated fat, making it significantly higher in fat content with a total of 21.33 grams of fat. These values, however, are for the thick coconut milk from the first pressing - subsequent pressings are thinner and less in calories, but the calorific value is still more than that of almond milk.

    While neither is considered a great source of protein, almond milk has surprisingly very little protein (0.42 grams); even less than the 2.29 grams in coconut milk.

    Carbs

    Almond milk and coconut milk are pretty even when it comes to carbohydrates. Almond milk contains 6.67 grams of carbohydrates. Coconut milk has 5.54 grams of carbohydrates.

    Other Nutrients

    Almond milk is much higher calcium (188 mg) and potassium (220 mg), but also higher in sodium (63 g) compared to coconut milk.

    Coconut milk is much lower in sodium (13 mg), but also very low in calcium (16 mg) and potassium (50 mg) compared to almond milk.

    Health Benefits and Limitations

    Almond milk is low calorie and low fat. It is good for people who are lactose-intolerant or dairy-allergic. However, people with nut allergies cannot consume almond milk. If they do, they may experience swelling, hives, diarrhea, vomiting and a congested airway, which can severely limit breathing.

    Coconut milk is also good for people who are lactose-intolerant or dairy-allergic. Coconut milk can be consumed by patients receiving chemotherapy. People with coconut allergies cannot drink coconut milk. If they do, they may experience swelling, hives, diarrhea and vomiting.

    Because of the high oil content, coconut milk goes rancid quickly. Fresh coconut milk should be used the day it's pressed. Canned coconut milk should be used within a few days of opening, as should that in a carton.
